In Jerry Thomas’ How to Mix Drinks, The Bon-vivant’s Companion, published in 1862, numerous Champagne cocktail variations appear, including this version of a classic Champagne Cocktail.

Champagne Cocktail recipe

1 lump sugar in Champagne glass. 1 dash Angostura Bitters. Add Orange and Lemon twist and fill with iced Champagne. Muddle.
Ingredients used:
- Champagne Nicolas Feuillatte
- Angostura Bitters
- Sugar
- Lemon twist
- Orange twist

Why only a 3 rating for the Champagne Cocktail? If we were rating the Champagne, then we’d have gone with a 5. However, we felt the addition of sugar and bitters didn’t add anything to the drink, and really just weakened it, leaving us wishing we’d simply sipped the Champagne.
We selected a favorite Champagne, Nicolas Feuillatte, for the drink. We were fortunate to visit Champagne Nicolas Feuillatte a few years ago when we were living in Paris and took the train out for the day to tour and taste at the winery, followed by lunch in Epernay.
